In the UK the GSXS750 is called the GSR750 so "google" that to find reviews etc. I bought one last September, the thing to remember is that it has nothing like the performance of the GSXR750. However it is very easy to ride and has smooth consistent throttle response, ideal for someone progressing up the ladder.
Comfort for you will depend on torso/arm length and braking will always be the main problem. I know because I have been in a similar situation and had to take pain killers for a long time to be able to ride.
